This lot comes from Quê Liberica, a small-batch operation hand-picking Liberica from towering, 65-foot trees in Quảng Trị. With local demand taking nearly every cherry, only a fraction of this crop leaves Vietnam. We secured enough of this rare micro-lot for just 200 bags. Once this batch sells out, it won't return until next harvest.
Liberica has a different sugar profile than most coffee, so Quê Liberica tailored a process to it: a 180-hour anaerobic natural fermentation. Whole fruit, sealed tanks, seven and a half days of slow, oxygen-limited development. Long enough to build complexity. Precise enough to keep it clean.
The fresh cherries in oxygen-free tanks for 180 hours. This long ferment pulls the fruit's natural sugars deep into the seed. That's where the jackfruit and brown sugar flavors come from. Then we move into a careful two-phase drying process.
Time matters here. The dried cherries rest for four full weeks before we remove the outer parchment. This lets moisture settle evenly, so what you taste is clean, layered flavor, not funk.
